  مواكبة أحدث اتجاهات الطعام في مجال الأطعمة و المشروبات، تحتاج إلى فهم أحدث الاتجاهات – و لكن من أين تبدأ؟ كيف يمكنك تحديد الاتجاه الصحيح للنجاح؟ ما هي الاتجاهات التي ستقوم بتطبيقها و التي ستناسب خطط و أهداف مشروعك؟ أين ستقوم بالبحث لاكتشاف ما هي الاتجاهات الحديثة و الآتية؟   لماذا يعتبر تمييز الاتجاهات مهما يمكن أن تعمل الاتجاهات كمؤشر – حيث تقوم بالكشف عن حساسية الشركة اتجاه احتياجات و مستلزمات المستهلك. و لكن تحديد كيف أو إذا ما كان يجب على شركتك تبني اتجاه حالي هي مسألة معقدة. " ما هو مهم لملاحظته هو أن الاتجاهات تتغير – تحتاج المطاعم إلى العثور على جوهرها، موادها و قصتها" شيف زوبيا   من و ما هم المؤثرون؟ أحد أهم الأنواع الشائعة من المؤثرين المباشرين هم البلوجرز (المدونين) و الفلوجرز (مدونين الفيديو). هؤلاء الأفراد على دراية بما يحدث من تغيرات في الآراء، و بإمكانهم التأثير بشكل مباشر على الاتجاهات القادمة. إن التواصل مع المؤثر الصحيح مهم للغاية. "تحتاج مشروعات الطعام و المشروبات إلى تقديم أفضل ما لديهم لتقديمه و إعطاء الزبائن أفضل تجربة كلما قاموا بزيارة مطاعمهم. في بعض الأحيان تؤثر الاختلافات في الجودة على الزبائن أكثر من الاختلافات في الكمية." – زوبيا شيخ مؤثر آخر رئيسي و هي وسائل التواصل الاجتماعي. هنا حيث يكون باستطاعة الزبائن من جميع أنحاء العالم التواصل مع بعضهم البعض. لمناقشة مواضيع و اتجاهات جديدة و التأثير على آراء بعضهم البعض.
